The Ceremony of the Glory

Marco’s winning drink recognises the ceremony of the tattoo, and the fascinating work of the renowned tattoo artist Scott Campbell.  Hennessy Very Special Cognac shaken with a homemade mulled cider, Campari, fresh orange and bitters. Served up with a layer of decadent dark chocolate.

40ml Hennessy Very Special Ltd Edition
25ml Mulled cider mix
10ml Campari
2 Orange wedges
10ml Sugar syrup (1:1)
2 drops Angostura bitters

Method: Add all ingredients to a shaker, squeezing the orange wedges. Shake and strain through a fine strainer or small sieve. 

Glass: Coupette

Garnish: Grated dark chocolate over top. Squeeze the oils of a small disc-shaped piece of orange peel over a match or lighter above the drink to create a small flamed oil layer.

Mulled cider mix (500ml)
300ml Apple juice
200ml White wine
50ml House Vodka
75ml Sugar syrup (1:1)
4 thick Lemon wheels
½ Apple (Sliced)
2 Cinnamon sticks
15g Cardamom
10g Nutmeg powder
10g Black peppercorn

Method: Add all solids to a pan and heat until lightly smoking. Add the liquid, reduce heat and simmer for 15 minutes. Strain and bottle.
